Saucy Young Meatballs

Cutting down to a 500-calorie diet does not mean missing out on flavor. Make meatballs that will bring you back to Grandma's table.

These will freeze well for later use. So make a big amount to save for later.

The Sauce

To make your HCG phase 2 sauce, make sure your ingredients do not contain any additives.

You will need:

  • 3 cans of organic crushed tomatoes
  • 1/2 chopped onion
  • 2 cloves of minced garlic
  • 3 fresh basil leaves, ripped
  • 1 tsp dried organic oregano
  • 2 tsp black pepper
  • 1 tsp salt

Begin your sauce by pouring in the crushed tomatoes and then stirring in the rest of your ingredients. Cook it on low heat for about 20 minutes before starting your meatballs.

Veal Meatballs

For the meatballs, you will need:

  • 1 lb ground veal
  • 1/2 cup melba toast crumbs
  • 1 cup minced onion
  • 1 clove of minced garlic
  • 1 tbs dried organic basil
  • 2 tbsp fresh parsley, minced
  • 1 tsp black pepper
  • 1/2 tsp salt

Hand-mix your ingredients together until it feels uniform. Do not overwork the veal or the meatballs will lose firmness.

Roll the veal into bite-sized meatballs. Add them to your sauce and let it cook for a couple of hours so the flavor of the sauce works its way through the meatballs.

Citrus Cucumber Salad

Are you craving something fresh and zesty in the summer sun? Add a refreshing cucumber salad with a spritz of citrus to your HCG diet menu.

This dish calls for:

  • 1 large cucumber
  • 1/4 sliced Vidalia onion
  • Slices from half an orange
  • Fresh grapefruit juice
  • 1/2 tsp garlic powder
  • Salt and pepper to taste

Mix your ingredients into a bowl and add your seasonings. Finish off with a generous spritz of juice from grapefruit to use in place of a dressing.

Lobster Tang

  • 100-gram lobster tail
  • Fresh orange
  • 1 tsp fresh thyme
  • 1/2 tsp fresh rosemary
  • Pinch of salt and pepper

Splay your lobster on a broiling pan and cut a quarter of the orange to spritz its juice on the tail. Broil it on high for 3-5 minutes.

Mix the rest of your orange juice into a cup with the fresh herbs and seasoning. Dip your lobster into the deliciousness for a fresh, aromatic flavor.
