Place Melba toast, garlic powder, oregano, basil, in a plastic zip-lock bag. Next, crush and mix all the ingredients together, so that you have seasoned bread crumbs. Season your chicken with salt and pepper, then place in the zip-lock bag and cover with the breadcrumbs. Remove chicken from the bag and place on a baking sheet in the oven at 375 degrees until cooked all the way through. Add tomato, garlic, and parsley to a large skillet and let the ingredients simmer. Weigh out 100 grams of breaded chicken for yourself and place it into the skillet separate from the rest of the chicken so that you don’t overeat. Place the rest of the chicken into the skillet separate from the 100 grams and cover with mozzarella and Parmesan cheese for the rest of your family. Enjoy!
